Can you believe it is April 1 already. Today is a Palindrome 4-1-14, and as I whipped up these pancakes it occurred to me they were my 411 for the day. I am not sure what that means except where we live 411 is the nonemergency number, so they were definitely made possible since there were no emergencies in our house this morning. In fact it was a peaceful morning in the grand scheme of mornings. Everyone seemed to be moving at an average pace and there was even time for a sit down breakfast. Coincidently they really only have 4 ingredients since you can alter the seasoning to your preference and the amount is perfect for 1-2 people.
Little Miss loves pancakes and frequently request them though it is rare we have time for a fresh batch on a school day. This recipe is one of several quick and simple recipes I have adapted so that when time allows I can make fresh pancakes without having a heaping pile of leftovers. This recipe is perfect in that it provides fruit, whole grain, and protein.
Banana Whole Wheat Pancakes
Makes 2 servings
1 Banana, mashed
¼ cup Whole Wheat Flour
Nutmeg (about an 1/8 tsp – I just sprinkled until it smelled good)
Cinnamon (I always go overboard. Maybe 1 tsp.)
Combine all ingredients. If the banana is not overly ripe it is easier to use a hand mixer to get the pancakes smooth. Heat griddle with a small pat of butter. Cook and serve with warm Maple Syrup.
