National Peanut Butter Cookie Day – Why this Holiday is just not for me!

I thought I loved all things made with peanut butter, but apparently that is not the case.

I wish I could say I disliked these cookies because then maybe I would not keep finding my hand in the cookie jar, but that is not the case.  Unfortunately no matter how many I eat or pick at they are not satisfying that cookie craving.

I get it though.  The cookies turned out perfect, but what I apparently did not realize is that luscious creamy peanut butter forms a drier more crumbly cookie.

If you like that though this recipe is great.  Even better when you consider it is whole wheat.  Sadly though I will not be making it often as I like my cookies gooey, almost half raw.  If you have read about me, you know that because I am and always will be a fan of cookie dough.

Don’t worry I tried this dough too, which is why I might be even more lack of enjoying the end result because the dough had a great flavor.  The consistency was good too.  Easy to roll into a ball or eat by the handful.

Whole Wheat Peanut Butter Cookie

Ingredients

1 cup Peanut Butter

½ cups Brown Sugar

¼ cups White Sugar, Plus Extra For Sprinkling

¼ cups White Whole Wheat Flour

½ teaspoons Vanilla

1 whole Egg

1 handful chocolate chips or m & m’s (optional)

Directions

Preheat oven to 350 degrees.

In a large bowl, add all ingredients and mix until combined. If adding chocolate chips, m&m’s or another tasty treat mix them in and then roll dough into tablespoon-sized balls and place on baking sheets. Press criss-cross marks on top of each cookie.

Transfer to the oven for 10 minutes, then allow to cool on a rack for at least 15-20 minutes.

These cookies may not be tops on my list when I want a cookie, but a little creative thinking and they could be improved.  This was not a bad snack.
