The Good Fungi in your Refrigerator

Today is “Day of the Mushroom.”  If you look hard enough you can find a holiday for anything and everything.  I love finding the obscure food holidays and just having a reason to make a new recipe, or in this case celebrate an everyday item in our home.

As I think about mushrooms, it is surprising how many recipes and how often we eat them.  Oddly enough as a child I ate them and I specifically remember eating them on birthdays at our home as my mom would sauté them, but I was not a big fan.  I could take them or leave them.  Now I take them.  In fact I think I take them home in my grocery bag almost every time I visit the store.

In the last week we have had mushrooms several times.  We grilled some on our kebabs.  I used the leftover grilled mushrooms to add to a large entree salad for dinner Monday evening, and we had mushrooms on our homemade pizza.  Here are some other quick and simple ways to incorporate mushrooms into  your meals.

Mushrooms are unique in that they are a low calorie easy to prepare vegetable.  You can eat them raw, sautéed, broiled, grilled, or tossed into a number of different recipes.  Mushrooms also can act as a substantial part of the meal as they can be used as a meat replacement at times.  Such as this Sloppy Joe recipe or one of the more widely known menu items a Grilled Portabella Sandwich.  Mushrooms are a great item to use on Meatless Monday.  I have a salad that comes through our meal rotation in the summer that is basically a bed of mixed greens, cucumber, tomato, & blue cheese topped with a grilled balsamic portabella mushroom.
